This manual provides guidance for schools and local authorities on how to adopt a consistent approach to nutritionally analyse school lunch menus in order to demonstrate compliance with statutory nutrient standards. The manual also gives guidance on establishing a self-evaluation approach to the planning, analysis and review of school lunch menus. This approach ensures that continuous improvement can be a key priority.
This resource is principally for staff who plan school lunch menus in schools in Scotland (and evening meal provision in local authority run hostels): local authority catering providers, catering managers, and health professionals who provide advice and support for schools and local authorities in relation to nutrition and food provision. It may be of use to headteachers and other staff who have an interest in learning more about nutritional standards for schools.
